I wanted to come up with a recipe other than asparagus with Hollandaise sauce and I found one in a cookbook of mine. I also added a main dish of Tilapia brushed with Italian dressing and coated in Panko bread crumbs with a side salad! I've included the recipe and video enjoy!

Here's the Recipe:

  • 1/2 cup chicken broth,
  • 1 to 2 tablespoons fresh rosemary or 1 to 2 teaspoons dry,1 0r 2 garlic cloves chopped
  • 1 bay leaf, 1 pound Asparagus,1/3 cup chopped onion,1 tablespoon fresh parsley minced.
  • In a skillet combine broth,rosemary,garlic, bay,onion and asparagus. Bring to a boil, reduce heat cover and simmer 3-5 mins. til crisp tender, discard bay leaf, garnish with parsley serve.
