Big Jim and I disagree about what to with the leftover turkey carcass. He say's throw it away...I say make soup.It's pretty simple take the left over turkey carcass put it in a stock pot filled with water and a chopped up onion celery and left over herbs and boil for and hour or so. Then strain all of the solids saving the remaining liquid and voila you have amazing turkey stock. I make turkey noodle soup but you could really do anything with the stock you like.
