We live in the desert, so it would make sense we'd have scorpions here right? But, oddly I'd never seen one here.

Well, they ARE here alright! They apparently are just a little shy and only come out at night because they are nocturnal. They are called Northwest Forest Scorpions, and are common  in the foothills of the Cascades in Oregon, Washington and regions of Northern California. They have inhabited this area for a long time.
