I am currently on a low carb diet, actually the HCG diet. I found a recipe in the "Low-Carb Lifestyle Cookbook" By: Donna Colson. I had never considered making homemade mayo until I saw how easy it was. By the way mayonnaise is basically eggs and oil blended. On this diet I am allowed to use MCT oil because it helps to metabolize the high amount of protein in my diet. Mayonnaise is the base for so many dressings, tuna salad, deviled eggs, ect..

The basic recipe is as follows:

  •  1 egg (room temp) very important
  •  1/2 tsp. Salt (use fine sea salt)
  •  1/2 tsp Mustard (use dry)
  •  2 Tbsp Fresh Lemon Juice
  •  1 Tbsp White Wine Vinegar
  •  1 Cup MCT oil (Olive Oil, Safflower Oil, Coconut Oil)
  •  pinch of sugar or stevia (optional)

Now here's the tricky part blending. I use one of those tall hand blenders, this make take a few attempts. Most importantly make sure the egg is room temp.

Put the egg,mustard salt and vinegar in your mixing bowl begin blending and slowly adding the oil a little at a time. The ingredients will begin to thicken as it thickens add more oil until gone. Blend lemon juice and add optional sugar(stevia) and Voila healthy mayo.

By using MCT oil calories are reduced to 70 calories per tbsp.
