New Restaurant Bringing Gumbo & Po’ Boy to the Mall
I have come here to chew gumbo and grab a po' boy, and I'm all out of gumbo.
A food truck is about to graduate to a brick and mortar restaurant. But not just any food truck. This one specializes in food that's been under-represented in our area.
The taste of Lousiana is coming to Columbia Center Mall in March. Bayou Some Cajun (absolutely brilliant name) is opening near Dick's Sporting Goods on March 6th.
Pretty much all of Lousiana's greatest hits will be served including gumbo, shrimp and grits, and po' boy sandwiches. You can check out their full menu here.
The Bayou Some Cajun story is a heartfelt one. Anthony Federico comes from a family of restauranteurs in Lousiana. His family runs 3 restaurants in New Orleans. The Federico Macaroni Company was started by Anthony's grandfather in the 1920s. Anthony moved to the Pacific Northwest after Hurricane Katrina, where he met Karyn Connors. They opened Bayou Some Cajun together.
We're very excited about this new addition to Columbia Center Mall. I do love me a good po' boy.
