Since I'm back on my health kick, I was lurking on Chowstalker.com for great healthy recipes. I find I feel best if I eat Paleo. And there is even a way to buy Paleo already-made meals for those busy weeks when there isn't time to cook. I haven't tried those yet, but think I will order some from Pete's Paleo Ready to Eat.

So last night, I tried this one. It is great! I even brought some with me to work today for lunch and topped it with a little Parmesan cheese. It tasted like Lasagna! Course with the added cheese it's not quite as healthy! Oh well!
