This recipe of course would be far better with all fresh home-grown vegetables and seasonings that were grown from your garden but...when that isn't possible and you need something hearty and somewhat healthy this is a good "Go to"

Sometimes we all need a quick, hot, and filling meal. My kids liked this one when they went off to college because they could make a big pot for the whole house.

I'm headed out for a horse-riding camp trip this weekend. I can make this dish very quickly ahead of time, freeze or refrigerate it for days, and then just heat it up over a fire.

There are so many variations of this recipe so get creative and add or delete something you like or don't like.

The basic version:

1 lb Ground beef (I used extra lean)

1 Small Onion

3 Cans of beans (Kidney, Black, etc whatever you like)

3 Cans Stewed tomatoes (Even better if you use fresh tomatoes from a garden)

1 Can Hominy (Drained)

1 Can Corn (Drained)

1 Can Green Chilies (if you buy canned tomatoes Mexican style there are already chilies in them.)

1 packet Ranch dressing dry mix

1 packet Taco soup mix dry mix  (substitute with Chili seasoning) I don't use full packets. Just season to taste.

1 small can of chopped Jalapeno peppers (or fresh)

You can make this all in one pot: Saute your Onion then add a bit of Garlic, when onion and garlic have caramelized, add your Ground Beef and brown I use extra-lean ground beef but if you use beef with more fat, you should definitely drain or use a different frying pan to brown burger.

Add: All cans of beans and veggies (and/or other fresh vegetables on hand) and part or all of the packets of seasoning. Remember to drain Corn and Hominy.

Bring to a boil: then turn down to Simmer on the stove on low for an hour.

Serve:  individually and then add your favorite toppings

Toppings: Lettuce, Shredded Cheese, Tortilla Chips, Sour cream, Salsa, Avacado etc.

I saute my onions and add a bit of garlic. When I cook my Ground Beef, I add my Montreal Seasoning, I think it brings out the flavor of the meat nicely, Soak your beans or buy canned beans, No need to drain.

I used quick canned beans, corn, and hominy and added some leftover squash from the fridge. I like to use garden-fresh tomatoes if possible.  I used stewed Mexican-style tomatoes that already had green chilies. I added a few Jalapeno peppers too.

It's quick and easy and people can vary their toppings. It's always good with some Tortilla Chips and Salsa.
