Patti’s Perfect Thanksgiving Side Dish-Corn Casserole
I love Thanksgiving! It's a Free-Pass to eat! 2020 hasn't been kind to us. So, I'm all in for a feast with my husband.
So many family memories, and as we move forward with Covid restrictions, it can be difficult to make this day come together, without our family members. This year will be a small celebration.
I can, however, prepare the most delicious side dish to complement the turkey perfectly. A friend shared "corn-casserole" at a potluck dinner a few years ago. To me, it was the highlight of the meal!
It's really very easy to make. You'll be surprised at the simplicity of this delicious creation.
Here is what you need:
1 can of corn, drained
1 can of creamed corn
1 cup of sour cream
1 stick of butter (melted) 1/2 cup
1 box of Jiffy Corn Muffin Mix
1/2 cup shredded cheddar cheese
Mix all the ingredients (except the cheese) together in a bowl, and then pour into a greased 8 x 8 or 9 x 13 casserole dish. Bake at 350 degrees for 45 minutes. The center should be completely set. (not mushy)
After baking, top with the shredded cheddar, and bake for 10 minutes...then let the dish cool for about 5 minutes before serving.
